Candied Dragon Scales

As real dragonscale is hard to come by, I recommend fish scales, which make a suitable replacement. You will need a fish with large scales; any will do, but I have had much success with Carp. Line a baking pan with parchment, or a silicone baking mat. Spread out the scales from the fish in a single layer. Meanwhile, in a nonstick pan, heat a 1/2 cup of sugar over medium heat. This will eventually break down and turn liquid, and will then begin to brown. You may need to whisk to get the caramelized sugar to break into smaller pieces that will melt properly. When the mixture turns light gold in color, quickly pour it over the scales and stir to ensure even coverage. Break apart like brittle and enjoy!

 

I tried this recipe but when I tried to break it apart like brittle the scales themselves wouldn't break, only the solidified sugar around them. This left scales sticking out of the sugar in various places. Is there any way to stop this? I tried freezing the scales beforehand but the heat makes them pliable before it's time to break them. -TychoCelchuuu

 

Try soaking them in vinegar for 24 hours beforehand, the acid breaks the scales down and makes them easier to break. You may need to rinse in water to remove the vinegar flavor though, the first time I tried it everyone complained about the acidic taste. - Angus
